The story goes that back in the days of clipper-ships sacks of Indian coffee lay exposed to monsoon winds at port while waiting for transport and finally arrived in England yellow and swollen with moisture. Though the flavor was dramatically altered by this exposure, once roasted, it's unique flavor and heavy body was so well-received that the initial "flaw" was deliberately reproduced and refined further. Today, selected Indian coffee is stored in open sacks in open warehouses so that the monsoon winds can work their magic on the beans. The beans are stirred in their sacks 2-3 times a day to insure even exposure. Once the beans have swollen sufficiently, the sacks are closed and the coffee is shipped. If you like Sumatra coffee, you will probably like Monsoon Malabar, which has an even heavier body. In lieu of the Sumatrans strong herbal-musky notes, you will find delightful spicey notes.
